This oven-fried panko chicken offers a lighter, high-protein alternative to traditional deep frying without sacrificing that sought-after crunch. By using Japanese panko breadcrumbs and a hint of cayenne pepper, the chicken achieves a beautifully golden, savoury crust that locks in moisture and provides a satisfying texture. It is a fantastic option for a midweek dinner when you want something comforting but straightforward to prepare.
Perfect for a family meal, this dish is best served alongside a fresh green salad or steamed seasonal vegetables to balance the richness of the butter-brushed coating. The resting period after baking is essential, as it allows the coating to firm up and reach its maximum crispness. Whether you are looking for a healthy homemade take on breaded chicken or a reliable weekend treat, this recipe is sure to become a kitchen staple.

Back to contentsPreheat oven to 232°C with rack in middle.

Stir together butter, 1/2 teaspoons salt, and 1/4 teaspoons pepper in a small bowl, then brush all over chicken. Add chicken, 2 pieces at a time, to crumb mixture and coat evenly on both sides, pressing chicken into crumbs to help them adhere, then transfer, skin side up, to a shallow baking pan.
Bake chicken until well browned and cooked through, 30 to 40 minutes. Let stand, uncovered, 5 to 10 minutes to crisp.
